NaPoWriMo Day 7

I fell sound asleep last night before I could make a post, but I’m still enjoying this exercise and want to continue. It’s not reaching the destination perfectly, but enjoying the journey, right?

A boy curled into
   the nook of each arm, I hold
tight to the moment.

Recipe: Beans & Pasta

Beans & Pasta

Ingredients

2 lbs of 17-bean mix  (Mine came from Trader’s Joe’s.)
2 32-oz organic chicken broths
1 large tsp of minced garlic
2 lbs organic, whole grain pasta
2 or 3 handfuls of diced, organic carrots
1/3 of a lb of fresh, organic spinach
10 large, diced mushrooms
1 large, diced red onion
1 jar of organic spaghetti sauce
1 package of lean turkey burger

Soak beans overnight with 2 tbs of baking soda. Drain and rinse. Cook per instructions using the chicken broth in place of water. Add in carrots and garlic. Cook until tender.

Cook pasta according to instructions. Rinse and drain. Add to bean mix. Toss in spinach.

Saute mushrooms and onion. When a nice brown, add to bean mix.

Brown  turkey burger and add to bean mix.

Add entire jar of spaghetti sauce and stir ingredients together.

Heat and serve. Possibly add shredded cheese as a topping.

NaPoWriMo Day 3

Hibernation

Warm rays of sunlight penetrate
my sealed eyes. Light breezes tousle
my hair like a playful toddler, while I listen
to a bird-song melody play over the steady
rhythm of lapping waves. Eyes now opened,
discover new shades of green
at every glance.

My senses, awaken from their slumber,
find spring has arrived.

NaPoWriMo Day 1

My poetry skills are in terrible need of sharpening, but what better way to work on them than participating in NaPoWriMo? My hope is that they improve as the month progresses.

Pause a Moment

Maybe the subject line should be “Paws a Moment.” Either way, I was rushing through yet another crazy day, when I spotted Stormy and Wiley, now year-old sibs I worked to catch and rescued last spring, taking an afternoon snooze together in my reading chair. I decided that I needed to stop my frantic pace and just appreciate them.
